1/2 | TSP | Cinnamon | ||

1/2 | TSP | Nutmeg | ||
3 | TSP | Molasses Powder or 2 liquid | ||
1/2 | TSP | Sea Salt | ||
Mix well and cook over medium heat to bubbling simmer, 15 minutes |

1 | Pre-made frozen pie shell | |||
Remove pan from stove. Whisk eggs and
Half. Slowly whisk into pumpkin until smooth in color. Strain, whisk, and pour in frozen shell. (pre-cook shell if not frozen) For cleaning, place dish on parchment on a pizza pan - easier to fill shell on oven rack. Leave 1/4 inch open on crust, it will expand and then fall while cooking and cooling. Bake 10 minutes at 450, reduce to 350 for 35 - 45 minutes. Check with a table knife, should be clean when pulled from center. pumpking should have a slight jiggle when pan is tapped Internal temp 175 or above, but knife test is better. Cool for 3 hours or more, the pie will cook during cooling. The high temp at the start is to reduce curdling and set shell. |
